Peter Glatz retired from a forty-year career as a dentist to fulfill his dream of being a chef. He trained under Michelin-started Chicago chef Iliana Regan and worked at Nonesuch in Oklahoma City, named a Best New Restaurant by Bon Appetit in 2018. Since the start of the pandemic, he has been traveling and living in a converted school bus with his wife and dog. He spent the first part of the summer working with Zingerman’s in Ann Arbor and the last part with Iliana Regan at Milkweed Inn in Michigan’s Upper Peninsula.
